A Favorite Fall Fixing:  Pumpkin Mousse Pie

So every fall there are always the lovely limited edition pumpkin flavored edibles: pumpkin spice coffee, pumpkin donuts, pumpkin pralines etc. This year I found a new pumpkin flavored item: pumpkin spice pudding by Jell-O. And out of this pumkinmoussepiepudding one can make the most delectable Pumpkin Spice Mousse Pie in about 15 minutes or less. If you need a fast dessert this Thanksgiving or a change from the traditional pumpkin pie this is a great recipe.

The recipe can be found on some of the limited edition boxes but not on others. The original recipe is just for mousse; I have added the crust and made the extra topping optional.

Enjoy!

1) Pour 1 cup cold milk into medium bowl. Add dry pudding mix. Beat with wire whisk for 2 minutes until well blended. Gently stir in 1 cup thawed Cool Whip topping.

2) Spoon mixture into a pre-made graham cracker crust and refrigerate until ready to serve.

Optional: Mix 1 Tbsp. melted butter, ¼ cup chopped pecans, and 2 Tbsp. brown sugar and sprinkle over pie or pie portions.
