I have to share the most amazing experience I've had since I moved to Williamsburg. Due to a last minute family emergency, I found out on Tuesday, November 24th, that I would be hosting 12 of my favorite friends and family members for Thanksgiving dinner. It really couldn't be helped, the original plan was for dinner to be held at my parents' house, as is our family tradition, but the diminishing health of a family member and their subsequent move to hospice, called for my parents to leave town and for Thanksgiving dinner to be moved to my home...and with just 2 days to pull it all together! I called Blanche and BillLee Watkins, the Owners of Hog Wild Smokehouse, and they jumped into action, without missing a beat! In spite of the fact that it was 2 weeks past their deadline to order prepared Thanksgiving Feasts, they proceeded to put together the most amazing, customized Thanksgiving Dinner - talk about customer service! They were out of turkeys, so BillLee actually went out and handpicked a giant turkey for our party of 12, which he smoked to perfection. I won't soon forget their response when I told them of my predicament, "We'll take care of you. Don't worry about a thing!" and they were true to their word. Our meal was outstanding...and without the stress of cooking and running around. I actually had time to visit with my guests and enjoy the holiday! My New Year's resolution is to leave the cooking to the experts and call my friends at Hog Wild Smokehouse.

Smoked Turkey - Now that was one big bird, it must've been over 20 pounds! It was completely cooked and came in its cooking bag on an aluminum pan. All I had to do was follow the printed instructions provided for every item. I popped it into the oven for 90 minutes and it turned out moist and juicy!
Sausage Apple Cornbread Stuffing - This was a huge hit, even with the kids!
Pot Licker Collards - True to the name!
Candied Sweet Potatoes with Marshmallows - Nothing says the Holidays like candied sweet potatoes. It was decadent and delicious!
Giblet Gravy - Rich and flavorful, just like Grandma used to make...
Cranberry, Apple, Dijon, and Walnut Relish - This was divine. Billy included this on the side and it was the icing on the "cake" that was our Thanksgiving Feast. My mother-in-law has vowed to recreate this tasty treat...I told her to call BillLee!
