After all the snow we've had this winter, I'm relieved that today it finally feels like spring. I ran errands with the windows down, listened to folk music, and lay in the sun. Life has been good today.
Spring weather puts me in the mood for Italian food. I sit in the sun and daydream about the rolling hills of Tuscany, planted with olive trees and vineyards. I can almost smell the sauce heating on the stove, and my mouth starts to water. Fortunately for me, I can get that great taste of Italian cuisine without having to go quite as far as Tuscany. Sal's By Victor, in their temporary location on Richmond Road, is a little oasis of Italian cooking here in Williamsburg.
My favorite meal at Sal's is the Fettucini Primavera, a springtime dish of fettucini pasta with spinach, broccoli, mushrooms, green peppers, and a light cream sauce. The meal is tasty and nutritious, and puts me in a gorgeous mood. My hat is off to Victor and his fantastic Italian cuisine, friendly staff, and wonderful restaurant. Sal's by Victor is the perfect place to eat after enjoying a beautiful spring day.
